Kicked Up Rueben Dip
Ingredients
½ lb shredded Swiss Cheese
2 – 16oz cans of sauerkraut
1 lb shredded corned beef
2, 8-oz packages cream cheese, softened
½ cup Thousand Island Dressing
¼ cup milk
1 T white vinegar (makes it ‘kicky’)
½ t red pepper flakes (makes it ‘kicky’)
Directions

Mix all ingredients in a bowl.

Transfer to a small crockpot.

Place crockpot on high, stirring occasionally, until melted together.

Place crockpot on low/warm.

Serve with rye bread toast or crackers.
Notes
Makes enough for a party of 20 people who love sauerkraut.
Recipe can be easily reduced/increased by proportional amounts.
To make a creamier dip, add an extra 4 oz cream cheese and once it is all melted add a little more milk and dressing.
