Kicked Up Rueben Dip

Ingredients

  • ½ lb shredded Swiss Cheese
  • 2 – 16oz cans of sauerkraut
  • 1 lb shredded corned beef
  • 2, 8-oz packages cream cheese, softened
  • ½ cup Thousand Island Dressing
  • ¼ cup milk
  • 1 T white vinegar (makes it ‘kicky’)
  • ½ t red pepper flakes (makes it ‘kicky’)
  • Directions

    1. Mix all ingredients in a bowl.
    2. Transfer to a small crockpot.
    3. Place crockpot on high, stirring occasionally, until melted together.
    4. Place crockpot on low/warm.
    5. Serve with rye bread toast or crackers.

    Notes

  • Makes enough for a party of 20 people who love sauerkraut.
  • Recipe can be easily reduced/increased by proportional amounts.
  • To make a creamier dip, add an extra 4 oz cream cheese and once it is all melted add a little more milk and dressing.
